Three Philosophers 2009 (aged 1 yr)

Aroma:
Medium intense aroma of fresh picked cherries. Just a subtle plum under flavor from the malt.

Appearance:
A deep and hazy chestnut brown with a light tan head.

Taste:
Bold and sweet. The aging process had removed the sourness from the Belgium style base. This allows the sweet tartness from the cherry juice to really shine. A slight alcohol bite on the after flavor gives it a nice liquor sensation.

Overall:
A great example of what aging can do. One year has removed most of the harsh and sour flavors leaving a great desert beer. The strong sweetness is perfect with a slice of deep chocolate cake or maybe a dense and dry cheese.
