Dogfish Head Noble Rot

Website: "This saison-esque science project gets complexity and fermentable sugars from two unique wine grapes sourced with our friends at Nicole Cellars in Prosser, Wash. The 1st addition is unfermented juice (must), crim Viognier grapes infected with botrytis fungus. This 'noble rot' reduces the water, thus magnifying their sweetness and complexity. The 2nd is pinot gris must intensified by the 'dropping fruit' process. Then brewed with pils and wheat malts and fermented with a distinct Belgian yeast strain. It has a spicy white wine body and a dry, tart finish." I looked it up pairing suggestions on DFH website, and decided to make a night of it with my wife for an early Valentine. So, paired with baked lobster and crab. Very "saison" look, as it poured light-yellow gold with white head and lace. Chardonnay-like nose. Dry finish, spicy/green tartness to flavor and dry finish. Leaves a unique earthy after-taste. I really enjoyed this one. The great food helped, but this bottle was finished quickly and felt like too soon.

That sound awesome, shame that we struggle to get DFH beers out in Australia, only really Palo Santo Marron which is a fav of mine when it's available!
